Description: sweet, loaded with warming spices, soft, and a little crumbly.
2 scoops grass-fed collagen powder
1 c almond flour
1 c coconut flour
2 t ground ginger
2 t ground cinnamon
1 t pumpkin pie spice
1/4 t ground cloves
1/4 t baking soda
1/2 t salt
Scant 1/2 c monk fruit sweetener
1/2 t vanilla extract
10 drops liquid stevia, vanilla flavor
1/2 c grass fed butter or ghee
2 T plain ghee
2 T sesame seeds
Preheat oven to 325 F
Line a cookie sheet with parchment paper
Mix all dry ingredients in a bowl
Melt fats in the microwave and stir into dry ingredients, distributing evenly. You can also pulse these ingredients together in a food processor to evenly distribute the fat with the dry ingredients.
In a small bowl, mix eggs, vanilla extract, and stevia together and then combine with the rest of the ingredients.
Roll dough into 18 equally sized balls. Dip each ball in sesame seeds (optional) and flatten with the palm of your hand.
Bake for 12 minutes.
