Paleo Roasted Cauliflower & Onion Bisque

  • 2 heads cauliflower

  • 1 red onion

  • 4 cups chicken bone broth

  • 1 cup plain almond milk

  • 1/2 cup olive oil

  • 2 teaspoons salt

  • 1 teaspoon curry powder

  • 1-2 teaspoons basil

  • Ground pepper to taste


  1. Heat oven to 425 F.

  2. Roughly chop cauliflower and onion and put in a bowl.

  3. Add salt and 1/4 cup olive oil to cauliflower and onions, toss to mix.

  4. Roast cauliflower and onions on a cookie sheet for 20-25 minutes.

  5. Once roasted, place cauliflower and onion mix into a high-speed blender, such as a Vitamix. Or place in a deep pot or bowl and use an immersion blender.

  6. Add bone broth, basil, curry, and pepper and blend on high.

  7. Add almond milk until desired consistency is reached - use less or more, depending on how thick you want the bisque.
