2 heads cauliflower
1 red onion
4 cups chicken bone broth
1 cup plain almond milk
1/2 cup olive oil
2 teaspoons salt
1 teaspoon curry powder
1-2 teaspoons basil
Ground pepper to taste
Heat oven to 425 F.
Roughly chop cauliflower and onion and put in a bowl.
Add salt and 1/4 cup olive oil to cauliflower and onions, toss to mix.
Roast cauliflower and onions on a cookie sheet for 20-25 minutes.
Once roasted, place cauliflower and onion mix into a high-speed blender, such as a Vitamix. Or place in a deep pot or bowl and use an immersion blender.
Add bone broth, basil, curry, and pepper and blend on high.
Add almond milk until desired consistency is reached - use less or more, depending on how thick you want the bisque.
