Simple Narcissus Meatballs (a.k.a. "Scotch Eggs")

You may know this food as Scotch Eggs when in fact these hail from the North African country of Algeria and are called Narcissus Meatballs. My simple recipe is quick and includes only 2 ingredients. Great for breakfast - plus you can make these ahead and just microwave to reheat them.


Nutrition info per serving (recipe makes 6): 1g carbs, 21g fat, 27g protein, an 305 calories.

Ingredients


  • 1 lb ground pork

  • 6 eggs, soft boiled


Instructions

  1. Preheat oven to 400 degrees F.

  2. Soft-boil 6 eggs. Put in ice water and cool before peeling.

  3. Divide pork into 6 portions and flatten them out into thin patties.

  4. Peel all 6 eggs and one at a time, wrap each egg in a blanket of ground pork.

  5. Place all pork-wrapped eggs on a baking sheet lined with parchment paper and bake for 25-30 minutes, until the pork is no longer pink.

  6. Enjoy on their own or dipped in sriracha (or, pictured on the left in above photo, a bit of mayo mixed with mustard and a splash of lemon juice).
